It's the first time I've tasted this dish, Jambalaya, which the chef and my party colleague, John Tan, told me is a favourite food of the American South. Delicious and substantial with three big prawns, chunky chicken, tasty rice and salad. My only suggestion for improvement is that perhaps the servings could be smaller, in the interest of reducing food wastage.
